Prepare recent sales, wage costs, food and beverage costs and occupancy expenses. Weekly data can reveal trends that annual statements hide.
Supplier and payroll calendar
List major payment days and the cash balance required to trade safely through them.
Venue-by-venue performance
For multi-site operators, separate stronger and weaker locations. A consolidated result alone may not explain where cash is being generated or consumed.
Seasonality and events
Use comparable periods from prior years where available. Explain holidays, weather exposure, major events and seasonal peaks that materially affect sales.
Fit-out and expansion costs
For a new venue or refurbishment, separate the project budget from ongoing working capital. Include a realistic allowance for the ramp-up period after opening.
